Tossed Mozzarella Salad

Mozzarella is the most popular pizza cheese and becomes incredibly stretchy when cooked in an oven. When consumed fresh, mozzarella and bocconcini are deliciously milky, squeaky and rich to eat.

  • 1 cup Fresh Mozzarella or Fresh Bocconcini (Baby Mozzarella) 
  • 1 tbsp Italian Herbs 
  • Salt & Pepper 
  • Pomegranate Seeds 

Drain the cheese and tear the mozzarella into rough thick strips by hand. (If using Bocconcini, drain and use the bite sized pieces directly). In a medium-sized bowl add the cheese, pomegranate seeds and the Italian herbs with salt & pepper. Toss them all together and dig in!

Herbed Ricotta Toast 

Ricotta is freshly made buffalo milk cheese separated from whey. It is creamy with a fresh and light taste and spreadable consistency. Goes well with both sweet and savoury dishes!

  • Sliced Bread (preferably sourdough) 
  • 1 cup Fresh Ricotta Cheese
  • ½ cup of toasted almonds/walnuts 
  • ½ cup fresh basil leaves
  • ½ cup olives 
  • Italian herbs/seasonings
  • Extra Virgin Olive Oil 

Mix the ricotta and the Italian seasoning together. Spread a generous amount of ricotta cheese on a toasted slice of bread. Top it off with walnuts or almonds. Add some olives and sprinkle over some Italian herbs. Garnish with fresh basil leaves and there you go!

Tomato and Mozzarella Caprese Salad

Made from fresh buffalo milk, mozzarella is creamy, silky and soft. It is low in sodium and fat, and makes for a healthy cheese option!

  • 3 ripe and firm tomatoes, thickly sliced
  • 250 gms fresh mozzarella, thickly sliced
  • Half-cup fresh basil
  • Extra-virgin olive oil, for drizzling
  • Salt and pepper

Layer alternate slices of tomatoes and mozzarella and add a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil and season with salt and pepper, to taste. Bite into some for a delicious snacking experience!
