5 Delicious & Easy Meals You Can Cook Under 30 mins!

Summer is winding down and as we prepare for cooler weather, earlier sunsets, and sweater weather (!) We wanted to round up a few of our quick meals that you can whip up any night of the week. From Pasta to Pepper Rasam, take a look at our 30-minute meal ideas, all of which are rated four or five stars by our customers!

 

1. Pepper Rasam and Rice


A heart-warming, delicious soup preparation from Southern India. It has a distinct sour, peppery and chilly taste that makes it a true repository of flavours. Use our freshly made Rasam Powder for a distinct homemade taste.
Enjoy the Rasam along with rice or savour it after a meal.

Ingredients: | Prep Time: 20 mins
Pepper Rasam Podi: 1 Tbsp
Tamarind: 1 small lime size piece (15 gms)
Garlic: 4 cloves crushed
Water: 2 1/2 cups
Freshly chopped coriander (optional)
Curry leaves: 1 sprig
Mustard Seeds: For garnish
Mix all ingredients, set aside for 10 minutes. Heat the mixture till bubbles form around the vessel. Do not boil. Remove from the stove and garnish with mustard seeds, curry leaves and coriander. Serve with hot rice, & the Original Murukku to add a crunch!

2. Herbed Pizza with Shitake Mushrooms, Fresh Basil and Mozzarella

Who doesn’t love pizza night? Instead of ordering in, get ready to create your own version of delicious, gourmet pizza in under 20 minutes. Our Herbed All Flour Pizza base is infused with sun-dried herbs and embedded with sun-dried capsicum-giving you a great looking pizza base and an exciting pizza story!

Ingredients: | Prep Time: 25 mins
Herbed All Flour Pizza Base - Pack of 4.
Classic Pizza Sauce: 1 jar
Fresh Mozzarella Cheese: 1 pack

Toppings:
Shiitake Mushrooms
Black Olives
Red Bell Peppers
Sun-dried Cherry Tomatoes
Italian Basil Seasoning
Sliced Onion
Garlic
Jalapenos (optional)

Spread the Pizza Sauce on top of the herbed all flour pizza base. Slice the toppings in small bite sized pieces. Layer the toppings on the pizza as per your preference. Garnish with Italian Basil Seasoning, Salt and pepper. Cover with delicious strings of melt-in-your-mouth Fresh Mozarella.
Bake the Pizza base with toppings and cheese at 200 degrees celsius for 15-20 minutes, until the edges of the base start turning golden brown.
You will know it’s done when your home smells divine with the wonderful aroma of a freshly baked pizza!

3. Asian Tofu Salad with MicrogreensThe flavours of Asia are front and centre in this fresh, light and zesty salad. The microgreens add an extra crunch and irresistible flavour. Whip this up when you need a light and balanced meal that is high in protein and full of nutrition. Guaranteed to make you feel like a winner!

Ingredients: | Prep Time: 15 mins
Carrot and Ginger Tofu: 1 packet
Purple Cabbage : 300 grams
Cherry Tomatoes: 6-7 pieces
Aquaponic Romaine Lettuce: 1 bunch
Aquaponic Butterhead Lettuce: 1 bunch
Asian Salad Dressing: 2 tbsp


Dice the tofu in cubes and set it aside on a kitchen paper towel for an hour. Meanwhile, cut the cabbage and lettuce lengthwise. Gently toss the ingredients together in a salad bowl. Mix it with Asian Salad Dressing and add some sesame seeds for a delicious crunchy and superlative nutty flavour!

Make it special: Add some raisins, roasted peanuts and fried garlic as toppings to make it fancier!

 

4. Mediterranean Caprese Sourdough Sandwich 

Reminiscent of the Mediterranean Italian island, caprese means “from the island of Capri”, where the sweetest tomatoes and leafiest basil plants are grown. The best caprese sandwich personifies simplicity in its healthy ingredient list and how it is layered together, making it an awesome no-cook supper choice.

Ingredients : | Prep Time: 15 mins
Classic Basil Pesto: 4 tbsp
Fresh Mozzarella Cheese : 2 Slices
Multigrain Sourdough Bread: Sliced
Sliced Caperberries: 6-7 chunks
Fresh Tomato Sliced: 2 nos
Vegan Butter: 1 tbsp
English Cucumbers: Sliced
Salt and Pepper: To taste

Spread pesto onto one slice of sourdough bread. Layer with mozzarella cheese, tomato, basil leaves, cucumbers and sliced caperberries. Sprinkle salt and pepper to taste. Top with a second slice of sourdough bread.
Butter the outside slice of the sourdough bread. Place into a heated skillet or griddle. Cook until golden brown. Repeat on the other side. Cut and serve

Make it Special: Add a fine glaze of balsamic vinegar just after you add salt and pepper. It really rounds off the flavours of this gorgeous caprese sandwich. 

5. Classic Tomato and Basil Fettuccine Pasta


This quick cooking Pasta dish is an absolute favourite with us in-house. The juicy tomatoes are infused with the herbal sweetness of basil and meld together beautifully with the artisanal fettuccine. A simple, satisfying meal that is the epitome of perfection. 

Ingredients: | Prep Time: 20 mins
Classic Tomato Basil Pasta Sauce: 1 jar
Traditional Fettuccine Pasta Semolina: 1 box
Rosemary and Thyme Infused Olive Oil : 4 tbsp
Fresh Basil leaves: 3 or 4
Freshly ground pepper: To taste


Heat water in a large saucepan and let it boil. Add a dash of olive oil and immerse the pasta. Let it cook for 7 minutes al-dente. In a skillet, heat some Rosemary and Thyme infused olive oil. Add the pasta sauce, until bubbles form on the edges. Immediately remove from heat.

Drain the pasta and add cooked pasta to a plate. Ladle the sauce gently and top it with fresh basil leaves and freshly ground pepper.

Make it Special: Top this up with some grated Himalayan Garlic Montasio cheese for an exquisite flavour.
