Alphonso Mango Aamras

One of the simplest, most delicious dishes, aamras is a traditional Maharashtrian dish made with the pulp of mangoes. 


  1. To make aamras, separate the flesh of 3 alphonoes.
  2. Blend in a blender and sieve.
  3. Add milk for desired consistency. 
  4. Sprinkle cardamom powder and mix. 
  5. Serve with pooris. 

 


Alphonso Mango Phirni 

A classic North Indian dessert, phirni is a soft set pudding made with coarsely ground rice cooked in milk. 


  1. To make phirni, coarsely grind rice and add to boiling milk. 
  2. Add sugar and saffron water and stir till rice is cooked. 
  3. Add sliced almonds, cashews and rose water. 
  4. Set in pudding bowls in the fridge.
  5. Serve chilled.


Alphonso Mango Pudding

A fusion dish that combines the best of Indian tastes and western serving styles, this soft scoopable pudding is delicious! 

  1. Blend together mango pulp, milk and sugar into a thick shake. 
  2. Separately, dissolve agar agar in hot water. 
  3. Combine the shake and agar agar. 
  4. Add mango cubes. 
  5. Add into bowls and set in the refrigerator. 
  6. Serve chilled with sprinkled cashew.
