One of the simplest, most delicious dishes, aamras is a traditional Maharashtrian dish made with the pulp of mangoes.
- To make aamras, separate the flesh of 3 alphonoes.
- Blend in a blender and sieve.
- Add milk for desired consistency.
- Sprinkle cardamom powder and mix.
- Serve with pooris.
Alphonso Mango Phirni
A classic North Indian dessert, phirni is a soft set pudding made with coarsely ground rice cooked in milk.
- To make phirni, coarsely grind rice and add to boiling milk.
- Add sugar and saffron water and stir till rice is cooked.
- Add sliced almonds, cashews and rose water.
- Set in pudding bowls in the fridge.
- Serve chilled.
