We all need comfort, especially in these difficult times, and what better way to do it than great food. But what if you are missing an ingredient, or want something greener or healthier? Start with these basic, fun and flexible recipes and allow yourself to say, ‘Whatever!’
Add any cooked grains of your choice, with raw, steamed or roasted vegetables. Add some leafy greens, herbs, and nuts. Top with a hot sauce, salad dressing, yogurt or whatever! Mix and Enjoy.
Use a simple combination of olive oil, lemon, salt, pepper and honey. Whisk it well and store in the fridge for upto 10 days. Dress it up with whatever herbs you prefer, like coriander or mint. Add mustard if you like, or not.
Chop your favourite vegetables and lightly sauté them in oil. Add garlic, ginger, fennel, salt, and pepper. Add water and let it simmer. Before serving add some apple cider vinegar, or lemon. Be bold, be crazy!
