A mildly sweet, creamy cheese that has a mildly nutty flavour. The younger cheeses have a mild flavour and soft texture, with age it can become harder and the nutty flavour is enhanced.
This artisanal cheese is made in the pristine environs of the Kumaon Himalayas. Named after the village Darima, it is situated at an altitude of 7000 ft and is surrounded by thick oak and rhododendron forest.
